Recipe: Gin and Lime Truffles

Brace yourselves, you're in for a treat. My hosts for while I'm on work experience have allowed me into their kitchen to bake up some sweet treats, including honeycomb, creme and brûlée and these.

After watching Sweets Made Simple on Friday Night we set out to get the ingredients for the gin and lime truffles the next day - doubling the recipe naturally. And simple it is indeed.


Ingredients:
  • 200g dark chocolate
  • 4 tbsp double cream
  • 4 tbsp gin
  • 100g butter
  • Zest and Juice of a lime
Simply melt the chocolate with the cream in a bowl over a pan of boiling water. Take off the heat and stir in the butter until smooth and glossy. Then add the gin and lime zest and juice. This is the hardest part - pour into a tub and leave to chill OVERNIGHT. We may have been a bit impatient and make a few after only a few hours setting time - it was messy business. We rolled ours in cocoa butter and coconut flakes.
