Recipe: Red Velvet Cupcakes

I've attempted Red Velvet before but it wasn't particularly successful, 1. It was dense 2. It wasn't very red.
I searched the internet for a good recipe and came across Nigella's which seemed to have pretty positive reviews. With a few adaptions I think I may have cracked it.
for the cupcakes
250g plain flour
2 tbsp cocoa powder
2 tsp baking powder
1/2 teaspoon bicarbonate of soda
100g soft unsalted butter
200g caster sugar
1 tbsp red food colouring (I used Sugarflair Christmas Red)
2 tsp vanilla extract
2 large eggs
175ml buttermilk
1 tsp cider vinegar

for the frosting
270g icing sugar
80g cream cheese
80g butter
1/2 tsp cider vinegar

Preheat the oven to 170°C, line 2 muffin tins with cupcake cases.
Mix all cupcake ingredients together until thoroughly combined.
Use an ice-cream scoop to make the cakes even, 1 scoop in each case.
Bake for approximately 16 minutes until a skewer comes out clean.

For the frosting - mix cream cheese and butter until smooth and then sieve in the icing sugar and add the cider vinegar. Beat until combined. Pipe onto cooled cupcakes and sprinkle on some crumbs.
