Recipe: Marmalade Cake

With the release of Paddington on DVD last week I decided to make a Marmalade Cake to go alongside watching it.
It was also served at our Coffee Morning last Friday, see the post all about that here.
I thought I'd share the recipe as it was really popular (especially with my Dad!) I think the key to this recipe is buying a good quality marmalade, ours was Wilkin & Sons 'Tawny' Orange Marmalade - I also love their Raspberry jam.

For the sponge:
175g unsalted butter, softened
175g caster sugar
3 large free-range eggs
175g self-raising flour
pinch salt
1/2 tsp baking powder
3 heaped tbsp orange marmalade
2 tbsp semi-skimmed milk

To decorate:
3 heaped tbsp orange marmalade
100g icing sugar
2 tbsp warm water

Preheat the oven to 180°C/350°F/Gas 4.
Beat all sponge ingredients together, stirring through the marmalade and milk last.
Spoon the mixture into a greased and lined 1x20cm round, deep cake tin.
Bake for 50 to 55 minutes or once a skewer comes out clean.
Carefully turn out the cake onto a wire rack and spread over the marmalade, leave to cool.
Once cool, sift the icing sugar into a bowl and add water to form a smooth runny icing. Pour the icing over the cake and leave to set until cutting.
It's really moist and "very marmaladey" (thanks Dad!) Paddington is a brilliant film FYI and definitely not just for kids!
